Lindsay’s Gluten Free Doughnut Cookies!

Gluten Free Doughnut Cookies from My Good friend Lindsay McPhail from Earth Monkeys!

3/4 c coconut flour
1/4 c tapioca flour
1 c millet flour
1/2 tbs xanthum gum
1 tsp baking powder
1/4 c sugar (I used organic sucanat)
1/4 c light olive oil (I used 1 kids applesauce cup no sugar added)
2 large eggs
1 tsp vanilla

2 tsp unsweetened cocoa powder
1 1/4 tbs powdered sugar
1 tbs nonfat milk (I used almond milk)
1 tsp vanilla

preheat oven to 350

basicall mix her up… (it will be on the dry side so you’ll need to kneed it until everything is combined.) then I just made little balls and rolled them into little “snake like” things and connected them to make a donut shape..

bake for 5-8 min dip in glaxe when completely cool:)

**If you’re not on a GF diet you can just use 2 cups of reg flour instead of the mixture I made
