GF Sweet Potato Biscuits…from Frugal Granola

Hey I must give as shout out to one of my fave healthy and otherily awesome blogs I love to read FRUGAL GRANOLA shes in the blog roll on here check it out! Here is a recipe im going to try from her gf recipes…try it and tell me what you think and i will too!

Gluten-Free Sweet Potato Biscuits
1/2 cup Bob’s Red Mill “All-Purpose” Flour Mix
1/2 cup Coconut Flour
1 cup Corn Flour (I used a brand that has already been soaked in lime)
3/4 cup Teff Flour
1 tbl. ground Flax Seeds
3/4 cup brown sugar (white would work too, but I thought this was a fun taste)
1/ 1/4 tsp salt
1/2 tsp nutmeg
2 cups mashed, cooked organic sweet potatoes or yams
3/4 cup organic sugar
1 tsp real vanilla
4 tsp baking powder
1/2 tsp (or more) cinnamon
3/4 cup chopped nuts (if desired)
1/2 cup melted butter

Combine dry ingredients and nuts. In different bowl, combine rest of ingredients. Add to dry ingredients and mix well. Turn onto a lightly floured surface; knead slightly. Roll dough to 1/2” thickness and cut with a small biscuit cutter (or a round glass). Bake on lightly greased baking sheet at 450*F for 12 min. or until golden brown. Yield: 1 1/2-2 dozen
