Gluten Free Butternut Squash Mac and Cheese

I put the gf spin one this yummy vitamin a packed version of macaronie and cheese .

– One box lundberg gf brown rice penne
-half cup butternut squash puree
-half cup milk
– one tbs olive oil
-one tbs brown rice flour
-four oz low fat cream cheese
-8oz reduced fat cheddar cheese

Boil the noodles according to package directions drain, rinse with cool water and set aside.

Heat oil in med sauce pan over med heat wisk in rice flour,add milk wisk til thickend. Add puree and cheeses stirring until smooth. Salt and pepper to taste.

Pour pasta back into its pot or a large bowl, pour sauce over pasta and stir til combined.
